As you can see, I created a new one for my menu to replace the one from Ice and Fire, but it doesn't work. What can I do?

It looks like Ice and Fire is overriding the title screen, so FancyMenu can’t show your layout until you disable that mod’s custom menu. Just edit config/iceandfire-client.toml and set
B:"Custom main menu"=false
then restart the game. Once the mod stops forcing its own screen, your new FancyMenu layout should appear.
