SpiffyHUD is strictly for HUD overlays—everything it adds is rendered on top of the regular HUD and only works there. It never touches the GUI screens (you can read that in the Spiffy Elements overview for confirmation).
FancyMenu itself also can’t rewrite the built-in inventory screens (main inventory, crafting table, chest GUIs, etc.) because those screens are far too complex to edit; you can only add new elements or overlays, not reshape the existing inventory layout.

So: no, you can’t edit the player inventory GUI with SpiffyHUD/FancyMenu. You can move HUD pieces freely, but the actual inventory screens stay untouched.
