- All resume bullet points should be one sentence.
- End all bullet points with a period
- I feel like recruiter is going to have a hard time understanding what you did. Maybe generalize or "dumb down" a bit so everyone could understand the high overview of your experience
- Don't put advisor's name. It might screw things up with ATS analyzing titles. Just say "Undergraduate Research Assistant" or something like that
- Relevant coursework in education section
A lot of things that I said might sound silly but it will screw up when ATS analyzes the resume, and it's probably the reason why you aren't getting much interviews

the first person reviewing ur resume is HR not an engineer
id strongly recommend you make two versions of ur resume tailored for research and industry roles
right now you have an odd mixture of both which dilutes ur expertise in both areas
to be 1000% honest, yes these projects are technically complex and yes your metrics are legit but theres a reason why basic CRUD apps do well, its because its super easy to demonstrate business/customer-level value to the non-engineer reading ur resume.
i strongnly recommend working on user-facing projects that are importantly deployed and work with data
