Im not a resume reviewer but afaik theres no point to putting the interest line and you’re better off using that to add a line somewhere else in ur resume. Correct me if im wrong tho

your projects should reflect your technical interests and if you have personal ones like baseball or something you just shouldn't put it on there that's how I view it

at small startup, can u say by how much u decreased turn around time?

when i got my internship offer last year, my manager emailed me saying he was excited to meet me and he had a PS on the bottom talking about one of my interests and how he liked it too
so i say if u have the room definitely put interests
people will consider u more human
