angelist has a lot of startup postings, some are on linkedin and indeed aswell
you can also cold email startups that don't have internship postings
if they're looking for fulltimers with experience in X technology and you also have experience in X technology via projects, send them an email asking if they're willing to bring on an intern. Mention that you have experience with what they're looking for. Hope that helps gl

Recruiters dont need to have any documents afaik. You need to send the offer letter and internship details to your international students office at your Uni. I would suggest mailing your international student advisor on what documents the uni will need to process your CPT

Personally, I don't think you need a set number/large number of leetcodes to do. When you're starting out, it's good to focus on making working, all tests passing code, but after a while, I don't think grinding aimlessly like this is worthwhile. Categorize the question types (i.e. arrays, strings, stacks/queues, backtracking, graphs, ...) and focus on the key points of the question, approaches you can easily bounce off of regardless of the question. You will likely burn yourself out and not have time to do all the possible leetcodes for a company, so it's best to just have a good sense of the fundamentals rather than grind without a goal.

python is just simpler because it's an easy to understand language with no outside concerns (i.e. memory management)
id say python and java are probably the best to use for interviews, but whatever is most comfortable for you

python is also a lot more readable, not all interviewers will be 100% with the language you choose to use but i think python is always a human-friendly language to use
