I'm not sure if this even helps but I think you should also try some d4 openings. I tried queens gambit and got hooked instantly

For Checkmate the King has to have nowhere to go whilst its also being attacked, since if the game carried on afterwards then the King would be captured no matter what. Whereas stalemate just means that player can't play any moves without putting themself into check which means its a draw since they can't move and you haven't won

I noticed that the majority of my games are always like this

Playing either white or black, I always end up with less pieces very early in the game

and usually my games the opponent always strikes me with an early queen attack

I don't know, should I always have some kind of strategy in mind to try and apply it then adapt it with the situation I fall into ?

There are a few of them

If you learn how to counter them efficiently

Should be easy

Also, stick to only one opening

As being a beginner, it’s useless to learn tons of different openings

Just stick to one and learn till being a God with it
