You can still charge a good amount because of time alone or people not having any experience/willingness to learn.

i would try find out as much info as possible and then tell them you will come back with a quote
this gives you time to give that info to someone else to help you lol

what pages they want, how the menu shoudl be displayed, what functions the site should have e.g. simple contact form, payment, etc.

Adding a checkout button or link to a payment page with like stripe is made easy by stripe. But making a platform like stripe, yeah... I need to go for a masters degree before I touch it. I have no idea.
I cannot do that yet.
even with stripe, if they want a customer log in to see previous orders etc. that could get complicated, not to put you off
oh yeah integrating stripe makes the whole payment process much easier
but yea if it's just an embed you're fine

i feel like restaurant owners don't like to spend much on marketing
and websites in general
they focus on the hospitality and the rest comes

if the seats are full they have no reason to i guess. we had the same thing as a petshop i managed
i told the owner we would increase sales
plus it's hard to find the work if you cannot email or call a decision maker and it's a cashier picking up the phone
but he didn't listen of course
and if you are finding their business online, chances are... they have a website already... right...
yeah.. since they're doing alright they don't think of increasing sales much
so you are offering redesigning at most
they tend to see websites and marketing as an added cost rather than an asset
so maybe focus on visuals rather than too much functionality
they will want to come back when the menu changes, lolll
unless they have admin for that
so this business doesn't even have a website to begin with so they definitely need one since they're a franchise and are expanding

Maybe I can join you on your restaurant project if you want, I am willing to work remotely. I try to find gigs off gig platforms. Thumbtack is another new one from the bay area, but it has more in-person work like construction roofing and such.
