I've seen other discords having them in a separate channel like "welcome", but then we might as well just get rid of them. Either way, it clogs up the general channel. Im not an active user of general though, so take mine with a grain of salt.
I also think it pushes up/splits convos or almost highlights when general chat isn't active so I'd rather them be gone or separate channel
i think the welcomes messages flood the chat too much :/
Not a fan of the "Wave to say Hi" button, as it takes up way more space than without. Also, considering how large this server is and the amount of people who join on the daily, maybe having the "new folks message" appear somewhere else wouldn't be the worst idea. 
If the server was way smaller and the join rate was lower, it'd make celebrating a new person feel more meaningful. But, with how many folk join a day, convos really do get burried pretty quick.
I mean, yeah. Just look at that. 
Mobile ain't any better. 
I would get rid of the welcome messages completely. It gets very spammy and is not seen well from new users.
And the #👋welcome seems great!

Hosting events works wonders for me. But, I've been a little busy lately to do them. 
Game jams are huge for my community.
But, in terms of just chat activity, daily questions or posting videos and talking points help alot.
Even little events like a weekly open office/co-working/show & tell/hang out hours go a long way.

As Shadow already said Events are great. I mostly do like weekly events...sometimes it's even just a little hangout, doesn't have to be huge. It's also important to have good conversations where everyone feels included. For example if someone says hi, I mostly just say something like "Hey, we currently have a conversation about X. What is your opinion on X?". Also especially on new members it makes them feel comfortable and keeps the retention up (which is important for a partnered server
). Also little tip for onboarding is that it's a lot of "What" questions. "What" questions are always perceived a little bit aggressive because you might experienced a lot of "What have you done?!!!" or "What are you doing?!", so a lot of negative things are mostly associated with it. I mostly use which or remove W-questions all together here and there. Also maybe split the title and the perks., so that the perks like "access to #🍎students-hangout" are the descriptions, are easier scanable and look cleaner in my opinion. Also when I first joined, I leaved pretty quickly despite the great community. This was mostly due to the high amount of channels, you might wanna slim them down. I know it's gonna be hard since it's already established for a long time probably but might help. Especially those channels that are rarely active, yesterday someone also was really sad that the professional hangout is rarely active for example and it's a pretty bad experience. However I do like that y'all have a low amount of read-only channels 
All of that is of course very nitpicking but generally it might help keeping the retention up and thus the activity.
