I don't see why not! Obviously once you get more experience with other companies you can always expand to include different types of work. But Zosh's portfolio for instance has multiple case studies from the same company: https://www.zcolah.com/

I agree, employers want to see how you think. I would include a side-by-side comparison and highlight how your design solution has solved the overarching problems with the old platform and how it addressed the customer's specific pain points.
