So, I am in the process of getting a new gaming PC since I'm selling my current setup.
My initial thoughts were the following:

However I have read several reviews that the I714700K overheats easily even with a 260mm AIO Cooler.
I have the full intention as I do with all builds is to get a 360MM cooler as I have chosen above.
If you could recommend any AMD CPUs which perform equally aswell without drops in performance and do not overheat, be my guest. My budget is £3000. @odd snow

I'd rather stick with NVIDIA Cards for now tbf. The AMD CPU you specced out for me has only 8 cores where the I7 has 20 which doesn't seem right...?

Nope! Just think there's no point in buying intel for gaming atm and I think the XTX is worth mentioning on the GPU side

So I've changed the specs around a tad to be honest with you, and this is what I have come up with. For a total of £2687 which has saved me £400 from my budget.

CPU - AMD Ryzen 9 7950X 16 Core CPU (4.5GHz-5.7GHz/80MB CACHE/AM5)
Motherboard - ASUS® TUF GAMING X670E-PLUS WIFI (AM5, DDR5, PCIe 5.0, Wi-Fi 6E)
RAM - 32GB Corsair VENGEANCE DDR5 6000MHz (2 x 16GB)
GPU - 20GB AMD RADEON™ RX 7900 XT - HDMI, DP - DX® 12

I would maybe go for a 14600k.
downgrade the 990 SSDs to a Samsung 980. (the performance of the two is too similar imo to really matter)
change the PSU to a 850w
the cooler could be changed to a 240mm or a 280mm

but if you're really aiming for future proofing. then there's no reason to go Intel imo
