Are the vials for the physical sneakers or just for NFT version? If for the Physical version how do we evolve them? if just for the NFT's why were they so expensive? what am i missing? again sorry for the post just don't have time to follow that closely.

Value of vials are on the digital realm. In this case the evo event is for essentially evolving the digital version of your dunk.
The physical forging event is just a side event RTFKT wanted to do to commemorate this evo event
By having a physical vial you can attach to your dunk shows you have the digital evolved version, essentially making the physical a proof of ownership of your digital asset.

They are digital/virtual, the only physical thing would be the vial itself that you can buy during the vial forge if you wish to do so

You get the evo 2 and 3 vials by burning the # of vials necessary mentioned in the chart

And yes you can upgrade to evo3 from evo2 with an additional vial
