You can change it in the settings! Should be under General!

yeah and every time i close the game, it reverts back to default, C, not to what i have saved to, F

That is a bug, the clock and temperature revert when reloading the game 🐛

I don't care as much about the C/F reversion, but the game always starting at Jan 1 on load is kind of a drag.

Yes they will be fixing this at some point! The game is still in early access and will have many more features added as well as bug fixes before release
