Regarding the initial question, they both work, but I think I would lean graveyard etb stuff instead, just because it's more fun to me
If you do end up going tokens I would put big x spells and spells to create lots of tokens at once

With cards like smothering tithe or rhystic studies I just always pay it unless I really need the creature
Eirdu isn't really a commander that typically wins with combat damage in my experience
Lifelink is nice for extra survivability
