large hydroponic farm only creating 5 organic vice 50 each cycle

i had this once: haulers were swirling around and the large farm did not output much to the conveyor.
in the end, haulers were "free" aka idle and when the large farm produces, and taking is enabled, the organics leave the farm via haulers.

so it is possible to arrive at OP conclusion, although caused by some module settings and idle haulers that take the task.
