From what I know, some spirits are better than others in some areas such as earth spirit having more hp than others (I think?), but what are the best ones for each situation? For example pvp, fighting bosses, etc.

Not really. If you dont have magma for MKK, use Waterspirit and prebuff your group with fire, cause water wont die.

For Solo PvP if you dont use Earth Spirit for Spirit BG
Cause Earthspirit tanks way more and so you use earth for Spirit BG and you can dispel your group with that, but mostly fire or water for buff.
PvP depends hardly on group and situation. Solo PvP mostly Windspirit because wind can stun enemy
