If it's any - I've written at length about your question.

Most regular players don't consider Champ gear because it's expensive (true, but champ chests have the same drop rate as Bon appetit chests, and use less than cups, which everyone gets) and considered "late stage" (it doesn't have to be).

If you focus on just one piece, a full run of Rising Champ will get you enough items to make one blue or purple.

The best choices are:
Boots - best boot is Inf Strides (gives travel speed and HP and are cheap to make);
Off hand - best choice is inf light (gives training speed, which could pay for itself in reduced troop cost, and it's also cheap);
Armour - best is Range plate (costs more than the boots or off hand, but it's significant better and has the benefit of upkeep reduction - this means your can be food positive even with a decent sized army). With luck and a few manes from events you can even start grinding that one piece to gold.

If you can afford the armour, get that.

Basic, very layman rule is if atk = 1, hp = 1/2 , Def= 1/4. Meaning anything above blue included atk jewel is better than gold Def.

In reality it entirely depends on who's attacking you. If you're always attacked by people a lot weaker than you then defense has value. Otherwise it really has no true value.
There's situations where HP is 2x or more effective than attack is.

Their difference in HP is 5%. If your cav stats in mix are low in mix there's no harm in using gold tassets instead for the 30% cav. You need those cav stats too as most people do attack with inf on blind attacks. Considering range stats are always high plus you'll get an extra 10% inf atk

Next thing is you go to your workshop and find the gear piece you want to forge.
You start at grey, then upgrade as much as you can

It's ok to jewel blue/purple and gold. You have 1 gold that gives 20% inf atk, if you divide it to 4 purples you'll get 48% inf atk,(28% more inf atk) considering that your other gear isn't jewelled.

In inf and mix if you keep going for the champ boots you can use them instead of tassets

And swap out the 3rd cup in inf for vial

Normally recommended you focus mix initially and branch out to blasts as mixed gear is used in the respective blast sets
