You need to think of attack/hp/def as a ratio of numbers that result in an overall strength number. Defense is useless in this equation so just ignore it. Use attack boost

In the pins there's a set for mix gear. That's a good start and all can be gotten without spending.

Honestly the best thing to do is go into the forge, select an item, say, start with main hand, then select a boost you want (for example inf ATK) and look at the list of pieces, see what gives the highest boost. See what other boosts they give. See what items they use and from which monster. Take notes. Repeat for all the boosts you might like and all the different types of equipment.
Then you can make your own educated choice. And calculate what you really need or what is more realistic to get, what to build first, what to save for, which monsters to focus on etc.
And you'll actually learn shit instead of just being given the final answer, so along the way you're just familiar with all the various pieces and you can see at a glance what an enemy is wearing and know what it means.

Hmmm... no I would say most p2p players don't have 2 type sets. Ive seen like a few champ players with those set ups but those are not really built very well

2 type pieces tend to be good for mix or have use in blast sets. But you choose to optimize jewels for either 1 type spear or mix.

People may 2 type their more difficult pieces or if they lack jewels, but they don't actually attack with 2 types- generally
