I feel gold ascension is a waste. The stat boost is tiny. There are a few char:Skarlet and Shang who's passives scale off their stats and so ascending them makes sense. Smoke's epic also scales based on his stats; ascending him and using his epic you would get a better boost.

Otherwise just ascend the chars you like and or play the most.

Once your diamond rooster gets strong enough you won't use them any way.
