diamonds are pretty much luck based. you can get free diamond from normal tower battle 200 and fatal tower battle 100 & 200. there are also 2 events that exist those are klassic reptile and shao kahn and they're easiest diamonds to get. by grinding diamonds you just pretty much open diamond packs, the biggest grind can be done when there's a sale and you have alot tons of souls ready. ENEG has the highest chances for diamond so you can open that

bosses carry health overtime, so it's just gonna take some tries probably and you'll finish them, the most recommended for bosses is klassic ermac as he dots and takes off their health and he can be bought from faction wars store, he's very beginner friendly
