I think the new grid changes are not ideal from a couple of different perspectives

Changing the grid size might seem like a niche thing but I feel like is an important thing in multiple games and ways. I used it to adjust how big a battle area was without having to actively resize and make bigger templates since the TTRPG I use counts combat stuff in squares. Additionally different TTRPGs might have different scales that are not really applicable to the S-M-L scaling that exists now.

I feel like the limitation on colours is a big accessibility issue and should not have been removed at all. I used it to both set a certain mood for an area and adjust colours for my monitor and eyes. My eyes have slight problems with reds on screens and the reddish colour option actively strains my eyes. Additionally both the non-black grid options are too bright for me personally on a dark floor and the black does not work, meaning I have to actively strain my eyes just to have a grid on a dark floor now.
I am not sure why the changes were made besides usage statistics, but it feels like it makes using the grid actively less accessible for me both visually and in terms of adjusting things as a GM.
there could be an advanced option at the current grid options that led you to the old grid settings that allowed for greater customisation
