There are two scenarios to talk about, Trick Room Pokemon and non Trick Room Pokemon

For Trick Room Pokemon, you always want as low of a speed IV as possible (preferably 0 or 1). If you have a Physical Trick Room pokemon, bottlecap everything except Speed and Special Attack (having high special attack won't hurt you, but it's pointless). For a Special Trick Room pokemon, bottlecap everything except Speed and Attack. Having higher attack IV can hurt you if they're running foul play against you or you get confused, but both are pretty niche scenarios so don't stress too much over it.

For non Trick Room Pokemon, it's the same pattern but always bottlecap Speed as well. Physical pokemon want all stats except Special Attack maxed, Special pokemon want all stats except Attack maxed
