I personally think that you don't need udemy courses and everything you can learn from udemy can be found for free such as on youtube.
We have recommendations for free web dev resources. The odin project has gotten lots of good reviews from members of this server and myself so I would probably check that out

Well, jetbrains has free sections and paid sections
But the first two are completely free
You reckon odins the one? Ill have a look at both
That's the one most people recommend because it goes into detail, it's updated regularly (which yt vids can't), it's quite structured, and it's well written imo

I'm not a web dev so I can't really talk about those paths, but I think the roadmap for AI and data science (my field) is a bit lacking
Tbh you don't need to worry about the topics in the roadmap in the beginning
You'll just overwhelm yourself
Just pick a starting point and keep going. Eventually you'll realise what else you need to learn
