The short/losing side was assigned but the long side never exercised, maybe because I didn't have enough cash in the account? It was a dollar wide spread, single contract

Worst case seems to be a ~$5000 hit on a $100 spread if worst possible scenario occurs which the broker just voided my winning side of the trade and assigned the short side

Normally ITM’s need no attention. Perhaps market is still settling trades. This happened to me once on GC options and it worked out fine. Settled at price that was correct.

No your account didn't have the margin so they are selling the shares but they couldn't because the market is closed, on Monday they should sell the shares and give you money. You'll have to call them to be 100% sure

Here's some advice I think that may help some struggling traders here.
Try to only watch and learn ONE symbol.

Watch one symbol only.
Wait for the set-up

Because in YOUR backtests, you see more great set-ups, than the losing set-ups.

• Once you get a set-up that is a loss, DO NOT jump to another symbol, because you may miss the good set-up on the symbol that you jumped away from.

If you jump around symbols, every time you have a loss on a symbol, you will miss the good set-ups.
It will be a revolving circle of rekt trades/accounts, if you jump around.

Be patient, you are not in a rush.
It is MUCH easier to be an expert at one symbol, than trying to be an expert at many.

Tip : put your limit order slightly above or below the fvg for entry. Depending on what side of trade you’re looking to take. To give yourself room to get filled. Price won’t always retrace exactly to fvg. Sometimes it’ll come close and then just take off.

And here my question begins: Is it worth going to EUR/GBP in such situations to highlight the weaker currency and thus choose a better short option?

This is tough, in a perfect world, this is suppose work like this, but unfortunately, we know it does not.
I have thought about this in the past, and decide to only analyze the first direct correlation, and not go beyond that for a hedge on other pairs

Because it really is a toss up when I do go beyond

As it involves another country as well that is not related to the initial pair
