A few days ago I tried changing the nozzle on my Ender 7, I put a little bjt too much force and ended up breaking the nozzle is half. Half the nozzle was still stuck in the hot end. After a little bit of drilling I got it out. Now I seem to be having under extrusion issue when printing, I’ve since changed the nozzle a few times making sure it wasn’t not the new nozzle. Any ideas for fixing this??

You might have damaged the hotend throat or heating block. You might need to replace those as well. Before doing that you should check for leakage just because it's possible you may have overcompensated by not tightening it enough.
How could I check for leakage?
If you see any filament on any part inside the heating block.
Im no longer seeing any under extrusion but the print is very brittle.
Is it possible you have damaged the part cooling fan or wires to it, looks a bit melty
Is it the same size nozzle you have put back in there? Assuming original one was 0.4..
that striped pattern on the side indicates underextrusion as well
as well as the "mesh" looking top surfaces
definitely still underextruding
just as a sanity check try pushing the filament through manually and feel how much resistance there is
