you should not need to disable software endstops
you don't need to "move there" to make the offset negative

What he means, is case it's unclear. You're in the wrong menu. That's to move an axis. Not to set the z offset. You can do that in advanced settings or at the beginning of a print in the tune tab (albeit more difficult)
