If you're removing windows, you don't really need sda2 either, although it's tiny
So... what happens when you try to boot?
blue screen saying failed to validate boot
saying go to recovery enviorment or use installation media
Open the terminal and type
mokutil --sb-state
what does it say?

It kinda sounds like a windows boot manager leftover, check the bios menu (boot tab) if you have other boot options (may be called grub or ubuntu)
there is ubuntu boot option other than mint
like there is linux mint then below it is ubuntu
Try booting there

efibootmgr
says?
Ok, type
sudo efibootmgr -o 0000,0001,0004,0005,0008,0003,0002
Restart and then check if it boots in mint normally.
