and if I do manage to delete these, should I be deleting files under papirus too? I'm not sure if there are involved too
Just to show that the first commands sort of worked
Do you still have it installed?
sudo apt remove sublime-text
should've removed it
If you installed flatpak version, use
flatpak remove com.sublimetext.three
It no longer shows up if I try to run it, though it did open once after I ran that command but then 'vanished' from my taskbar and menu when I closed it
I used sudo apt to install it
so it is removed then, unless you have proof of otherwise

When I search for sublime there are files that weren't removed
and when I try to delete them it says I don't have permission to
Sublime text deb file is in apt cache, you can clear it by running
sudo apt clean
Still nothing
tried autoclean and autoremove as well

Also why exactly are you worried about these small leftovers? They're small in size and doesn't affect the system
