Does anyone know why this is happening and how I can prevent it? I have an RX 9070 XT and two monitors connected through DP and one through HDMI

You are using a 9070XT with Mint? The kernel barely supports it. Perhaps try switching to kernel 6.11 from Update Manager > View > Linux kernels. But I would assume it needs an even fresher kernel.

Upgrade to 6.12 or newer, I currently have 6.12.33 Installed for my RX 9060XT. I am currently struggling on Upgrading Mesa to 25.0.0+ for my GPU to work correctly

Just saying that we don't have much expertise in wrangling non-Ubuntu kernels here, so you are on your own if you encounter issues with them. There are plenty of good distro choices for current hardware between Fedora, Bazzite, EndeavourOS, CachyOS and more.

Great, all distros are great but you know why I am on Linux Mint? Mint is User-friendly, and I dont want to fight with my OS permanently, thats why I use a Just-Works distro where Most things are easier, and yes I am able to tinker around however I dont want to do this permanently just to use my OS, EndeavourOS, I had it on a Virtual Machine and yes you see Terminals basically every hour just to use the System, want to edit Configs? EndeavourOS hates you and throws nano at you when you dont want it.
