I installed Steam via the logithèque, I wanted to uninstall it via the logithèque but it leaves files on my computer, and it remains present in the start menu, and in the “Applications” menu without being able to start it.
How can I uninstall it completely?

these r user files and there's no harm leaving them be

When I hide Steam I can still see him thats weird

in start menu, (at least in Cinnamon) there's a Recents item, go to it, and clear 'clear recent items'

and manually delete the .steam folder that's in your userhome folder
