vlcmedia player, but also pull a lot of thing that helps with playing various formats,wineruns some windows programs,cpu-xcpu temperature and stats and stuff,foliate.epub format ebook reader,markermarkdown editor and viewer,goverlaygame stats and stuff, pullsmangohud,

Gnome Authenticator is quite the nicety too, if you'd like your verifications on your desktop and stuff (not on phones)
If you use Internet Relay Chat, there's Pidgin, Hexchat, and Polari
If you're into GTK related advanced stuff/development, Gnome Development Tools are pretty cool + Workbench
