I plan to switch to Linux on my new computer next year, Mint looks like a promising option, but I'm very interested in KDE and its customization aspects.
I heard installing KDE on mint was a bad idea, and I'd like to know how destructive it is, is it just some extra steps to update, or do I run the risk of completely bricking the system?

if you want KDE plasma then use a KDE distro like Kububtu or fedora KDE.
installing it won't "brick" the system but it's unsupported and you may run into some issues
also keep in mind mint offers only kde5. you need to use a different distribution for kde6
if you wish for a mint-lik experience, kubuntu should have be silmar. there are also other Ubuntu-based distributions like TuxedoOS
I have concerns about Kubuntu being corpo owned, Tuxedo is on my radar as well but Mint looked more beginner friendly.
What types of issues would I run into?
mint and tuxedo are based on ubuntu so you get their stuff either way
I heard Mint and Tuxedo come preconfigured to get rid of Telemetry and other bad ubuntu stuff, doesn't it?
yes ubuntu does have an option to collect some data like crash messages or your installed packages. you can just disable it if you wish. and I think this is going too far off topic.
