Just installed this, previously I had been using the Flatpak version. The system package version also installs KDE Connect and other stuff. Can I delete these without breaking Okular? Are these things safe?

Well, the answer is no. They are called dependencies. To put it in analogy, to remove a dependency of a package is like to deprive a person of oxygen.
These packages should be safe, as long as they don't conflict with already existing packages in your system.
