What topics in pure maths are essential to learn in order to be mature mathematically? I'm trying to self study maths and I feel like I'm missing something when I try to learn what I'm interested in. Since I'm not following a proper course I don't know what to work on. Even prereqs seem hard and I wanna know which are worth learning simply to develop a mathematical mindset.

Depends, if you want to learn a course for your first proofs course, I would recommend either proof based linear algebra or abstract algebra ( with proofs of course )
