Linear algebra is used in so many places, why we care so much about linear transformations is because they are linear ( linearity is a condition which allows us to say a good amount )
Not sure if you're at this level yet, but in early calculus we talk a LOT about continuity, and it allows us to define a lot of different theorems using those properties ( think of the fundamental theorem of calculus relying on continuity )
In the same way we deal a lot with linear transformations for linear algebra
Transferring our ideas of functions to these transformations allows us to also apply the operations we use in linear algebra, 3B1B has a perfect video about thinking of i as a matrix and how applying e to a matrix makes sense
Of course, coordinates,matrices, and these transformations are important for physics, engineering, cs and more
We also like to talk a lot about mappings, knowing certain mappings ( say from one set to another ) is important
You can see the derivative as a transformation, a linear transformation in fact
That's just my two cents, matrices by themselves are so important to STEM and our modern day life
