It’s not possible to lowering your relationship with your livestock. If you want to have small product, you need to buy new one
Hmm i suggest if you want to keep small products, then dont pet them (or maybe not above 5 hearts)
(+) I recommend to keep give them food (hay/grass starter) so they will produce dairy for you

They need to change the offerings to only needing the highest quality, that way it increases the longevity of the game, it stops people from being punished for being too good lol. I just dont see a dying goddess saying: Eww this milk is to good, bring me your bad milk lol.

Unfortunately at the moment even breathing close to animals increases their hearts, it's too easy. You can't even get a sense of progress, because in a few days the animal starts to produce better quality products.
