Did your mouth survive the salad? I make it at home sometimes. I made the mistake early on of blindly using the same number of chilies, and then somehow got a batch that were hotter. I did not have milk handy either.

how do you like your papaya salad? there's different variations that you could do, and i usually eat it with fermented fish (pla ra)
I have no idea if it’s distinctive of any region or anything, but my usual single batch for me is papaya, green or long beans, cherry tomatoes, eggplant if I have some (more thinly sliced and less of it than the salad in your photo), peanuts, palm sugar, fish sauce (nam pla), lime, and chilies. Yours looks darker and less crisp than mine usually does (guessing a combo of using pla ra and maybe pounding the papaya a bit more?)
I guess if I could describe mine compared to some other versions I’ve had, I like it crunchy (pounding the papaya a little less, plus the green beans and more peanuts) and tart with just enough sweetness and bitterness and savory flavor to help balance it a bit. And it’s usually the hottest dish at the table, which confuses people who aren’t expecting it.
Here’s a pic from a while back of one I made. I guess the papaya actually looks a lot more noodle like but I still remember it being fairly crisp?

They are in the same culinary category: caramel is usually not heated to hard tack and is made using sugar (and sometimes includes milk or cream), but toffee is usually heated to hard tack and made using sugar and butter. Both are essentially "boil a sugar+dairy mixture, but don't burn it," just to different temperatures.

Aesthetically they look terrible bit they're small thick pancakes with apples and raisins in them, here's what I used:
250g flour
300ml milk
1 egg
1 pack of vanilla sugar (roughly) 8-10grams
Teaspoon of cinnamon
Bit of yeast
Bit of salt
1 apple (cut in small bits)
100g raisins
Also I used wheat flour this time, instead of the normal white flour but it's up to preference really
To bake them just add butter to a frying pan, and scoop with a table spoon three sepparate small piles of batter, then just bake them until the underside is brown golden, flip and finish
3 in de pan (Dutch recipe) gets their name from being baked as multiple small pancakes in the same pan
You can add syrup or sugar on top just like with normal pancakes too o/

White stuff, left: Bubur Sumsum (bubur is porridge, sumsum is the name. This rule continues for the following "bubur") mainly made out of rice flour
Pink balls, top: Bubur Sagu Mutiara made out of tapioca (and yes, the name is the same with Brazilian Sagu since... colonialism)
Dark red stuff, middle: Bubur Ketan Hitam made out of red/brown sticky rice
Dark orange cubes, lower right: Sweet Potato cooked in Javanese red sugar

Hi guys! I'm in need of advice! About caramel 🥄 🥣 Until this morning, I had only ever made very small amounts at once, and it worked perfectly. One spoon of water + one spoon of white sugar, let it melt, then bubble, then brown until the desired color is reached, and then add cream or milk, depending on what you're cooking with it. But today, I tried a recipe that called for caramel made from 300g of sugar. I used the same pot as usual, about 18cm diameter. I added 1 spoon of water. And... Some sugar lumps never dissolved :( Any advice? I did try to stir it with a spoon, if that's relevant; when I saw that the caramel was getting pretty dark and that some lumps were still whole, but it didn't help. What did I do wrong?
I would break up the lumps before putting them in the water. You can also put the sugar through a wide mesh strainer to make sure and catch the lumps. You want to try to avoid stirring the caramel as much as possible because it encourages crystallization which can make your caramel grainy
not really sure, to be honest xD its just one of the thickest soups i know :P but anyone can water it down to their liking :P

split peas, water, broth, carrots, celery stems, celeriac, leek, leaves of celery, and optional bacon :P

It sounds like you did the dry method. I've done this once myself I ended up adding a little bit of water to break up those crystallized sugar it will take you a little longer but you can recover from this
And in caramel stirring should be avoided lest the sugar crystalize.
Adding water to the sugar so the sugar is spread evenly and letting it boil undisturbed under a watchful eye is the best method I've found
I have enough for now, but I'll tell you next time I make some :)

Hiya!
So, all caramel is eventually dry. How you start doesn't matter one bit. Regardless of if you mix 100g of sugar with no water or 1 litre of water, you will get 100g of caramel (assuming it doesn't get sucked up in the steam). You only get to the thread stage at 105ish C and water generally likes to evaporate around 100. If what you've got going on begins to change colour, it's at least ~150 degrees. If somehow there were still water in it, please contact some physicists or chemists, because you've just discovered a new state of matter.
The primary reason people say to not mix the caramel is that is causes crystals to form. This is a bit of a misnomer; they form on the edges of the pan where you are sloshing the sugar mix up to the sides of the pan where they cool and crystalize. Caramel will not crystalize if it not allowed to cool down and start precipitating (or you get it up beyond 180 and you are burning it for sport). If you are not doing a "low and slow" method like making it in the oven (my preferred way), you could have spot burning without stirring, so I generally caution people against not stirring - particularly if nothing is being added to the caramel. It's going to harden; any "grain" can't be noticed there.
In your case, you are adding dairy after it has reached whatever your preferred colour is (I am a light-medium caramel fan, myself). If you had clumps of sugar from the very beginning of your caramel, and those never broke up, you were working with either sugar crystals that were too large to fully melt, or some of the initial sugar clumped together with the (I am assuming) small addition of water in the beginning. Like others have said, sifting your sugar (Though please do not use confectioner's sugar - there is no difference once it melts) is helpful, but I usually say "just dissolve it in water." The main merit of making it the dry method is that you don't need to spend the time and energy to evaporate the water.
@crimson fossil (Continued) Since you are adding dairy, a common thing that happens is that the solids in the milk burn when mixing it into the caramel (substantially higher temp than they would burn at). To safely add dairy, I usually recommend having a second pot on the stove or in the oven at close to the temperature that your caramel is heated to. If you need to, let the caramel cool some (but make sure it does not start to crystalize) so you can add the dairy without making a smoky/boiling mess. Having the two at closer temperatures means there is less of a temperature shock to the caramel (which can cause crystal formation when there is rapid cooling) and it reduces the risk of you burning any of those creamy milkfats that you are trying to get into the caramel by adding dairy in the end.
I usually recommend people at home to use anywhere from a 1:1 to a 1.25:1 sugar:water ratio (without heating, the most you will dissolve is around 1.4:1 by weight) so you have as little water to boil off as possible, but you still have something there to make sure the mixture is a solution and near homogeneous. Bring it to a boil, then toss it in an oven preheated to the temperature corresponding to your favourite caramel colour. Leave it in there for about an hour, giving it a light stir and clearing the sides of the pan (if any bubbling has deposited crystals on the walls of the vessel) every 15-20 minutes. If you are adding dairy, start heating it up around the last time you give your caramel a stir. Once you remove the caramel from the oven, slowly add the dairy, stirring constantly. This will reduce the risk of burning or getting a grainy caramel. If you do not want air bubbles in the caramel, be careful not to stir too vigorously. Once everything you want to add is incorporated, let it cool, either on the countertop, or by putting it back into the oven after turning it off (and then come back in a couple hours to get it.)
Oooh thank you very much for the detailed explanation, and for taking the time to write it down! It's all very interesting! I understand better my mistakes now. On the one hand, I gess I added just enough water to make lumps, but not enough to really help with dissolving the sugar. On the other hand, I most definitely used a too high flame, since some of the sugar started browning before all of it was melted! I didn't know you could make it in the oven, I'll give it a try somewhen.
About the dairy: the recipe I had said to heat up the cream until just below the boiling point, and then to add to the caramel. It DID make a smoking and boiling mess ^^ (but at least didn't overflow the pot :p ) Ok, so I get it, hot enough that the caramel does not cristallize; cool enough that the mix does not try to escape by boiling itself into oblivion.

Our family's recipe for Okoy is the basic ingredients of shrimp, beansprouts, carrots, sweet potato, flour, cornstarch, salt and pepper! Cooked with Italian herbs mixed with fennel seeds, coriander seeds, and cayenne pepper.
I was anxious today and looking for something to distract myself, so I made a bit of milk chocolate. From cacao nibs, powdered milk, and palm sugar. In a mortar and pestle. The temper wasn’t perfect, but it did have a surprisingly decent snap to it even at room temperature once it set. The hand grinding left it a little gritty and with tons of tiny little air pockets which gave it an interesting texture and crunch.
i forgot my phone charger, so i bought a new one at the grocery store, and they have a 'edible plants seeds' action going on currently. Hopefully, soon, i'll be having sunflowers, beans and herbs from those seeds :P

So, the weather in my place where I live is really hot (about 34°C) and the air in my room feels very stuffy, so I decided to find some sweet & cold treats. Finally, I found a street vendor that sells durian fruit ice and decided to order one (because I like durian too). Turns out it's so delicious, even I ordered another one haha (this time, with red beans.). Just sharing a short story about a sweet little thing that can make someone smile. How about you? 🍧 ♥️

I surprised at first because of its strong odour, but after I ate its flesh, really love its sweet flavour inside of it. Well, I recommend you to try it when you travel to Southeast Asia region.

My box arrived today and I feel like I’ve officially joined a cult. I’m not just settling for the small variety selection at my local Asian markets anymore…
I crumbled 100g of rice crackers, dissolved 4 Spoons of Tomato paste in 300ml of water, poured it all over those crumbles, added a diced onion, a buttload of spices and mashed it all together until it became a paste which I'm going to leave in the fridge overnight and then spread it on bread for breakfast.
How does this make yall feel?

Musang king was my prior favorite and what I usually bought from the more limited variety I have locally. I haven’t tasted everything from the order yet, but the kapri is my new favorite so far. It’s a bit less sweet and has a chocolate-like bitterness that helps balance it. It also tastes very different at different temperatures as it thaws, with flavors like pine, citrus, banana, coffee, caramel, and aged rum being more or less prominent depending on how much it’s thawed.

The asam laksa broth is uniquely sour because of two ingredients - 'asam gelugor' and tamarind paste.
