If you have 3 recipe of X country and 23 of Y, it make kinda "weak" categories

We could also just plonk in the recipes alphabetically, add a load of tags to them and see what categories work after enough of them have been compiled.

If this is just going to be a cute community thing, I remember finding some resources for how to veganize recipes that have dairy and meat in them from a YouTuber we can add. That way we don't have to worry too much about including vegan things.

For one big banana smoothie, mix the following ingredients:
- 2 bananas
- 200 mL of (plant-based) milk (should I shoot a quick recipe for this as well or nah?)
- 1 tspn vanilla powder
- 3 tspn cinnamon
- 1/2 tspn cardamom
- 1 medjoul date
If you make your own plant-based milk, you'll be left with pulp. This can be used to make porridge instead, by mixing the following ingredients:
- The smoothie
- About half a cup of the plant-based pulp
(You could add Brinta or whatever, but this is just a nice way to not throw away the pulp.)
You can add any of the following as finishers to the porridge:
- (Plant-based) yoghurt
- Berries
- Chocolate

yes I'm so excited! haven't gone much of anywhere in the last year!!
To make your own nutmilk, you will need the following tools:
- A big bowl. (Enough to contain your batch and then some.)
- A container. (I use a glass bottle that used to contain pasta sauce.)
- A nut-milk bag (would be ideal, but you could use a clean, thin kitchen towel.)
Ingredients: - = must-haves o = optional
- 1 volume part nuts (I use almonds, but most nuts work. Quinoa and oats too.)
- 2 volume part water.
o Medjoul dates (To sweeten the deal. The more, the sweeter!)
o A pinch of vanilla powder (To add depth to the taste.)
o A pinch of salt (Same as vanilla powder. Doesn't need to taste salty, just c o m p l e x)
Steps:
- Add all ingredients to a container and leave it for a day to soften.
- Mix all ingredients until it's largely one whole.
- Lay the towel/nut-milk bag in the bowl and pour the mixer contents into it.
- Wring as much of the fluid out as you want or can.
o Wring it out an extra time if you feel like it it should be smoother.
You're left with plant-based milk and a plant-based pulp.
...Or you could just buy a carton from the store. Most have 'em.
But this way you know precicely what's in it. And it's way cheaper if you buy everything in bulk.

1 salted pickled plum
I had no fancy plum but it was still pretty good.

Broccoli Soup:
1kg frozen broccoli
2 leeks
2 medium onions
5 potatos
1 Bigass zucchini
--Spinach 300g if you want--
Vegetable stock (or chicken stock if you dont care about it being vegan)
salt
pepper
1dl Vegan cream
Cut everything and boil, Pour off some of the liquid (Save it) and mix the greens with a blender /stick blender. Put back on stove and add a lil bit of cream. If its still too thick add some of the liquid you poured off earlier.
Serve with some vegan cremΓ© fraiche or sourcream and some homemade bread π

Rather than roux or a whitewash, a slurry out of tapioca starch give vegan cheese sauce a mozzarella vibe

It's a seafood pot my mom and dad made last night. There are glass noodles, squid (the white spiraly thing), wood ear mushrooms, shrimp, cabbage, some left over chicken and chicken broth. It was very yummy. The glass noodles sucked up the broth so they were very flavorful
Sadly I don't have the recipe as it's my mom's recipe. I could ask her but she'd probably give me the asian measurements. "Half a spoof of this, one pot of that, and handfuls of that over there". If you really want it I can try to ask her.

I got a suuuuuuuper easy but delicious tomato soup recipe you could try today
it's ridiculously easy and should scratch that itch
2 cans of good Italian tomatoes (look for "Mutti" if you can)
1 larger sized shallot
1 good sized clove of garlic
Brown sugar (if you can get real brown sugar (the kind that has molasses in it), use that)
Tomato paste (again, Mutti is great here - they have a triple concentrated tomato paste that is π)
Salt
Oregano (dried)
Basil (fresh preferably)
Olive oil
Baguette
Requires 1 medium-large pot, stove, blender
Mince shallots and garlic.
Sweat shallots in pot with olive oil over med-high for a few minutes and then add garlic.
Sweat for another minute~ before adding like 1-2 tablespoons of tomato paste.
Incorporate the paste and cook it off briefly before adding in the 2 cans of tomatoes.
Add in a shake of oregano, (hopefully fresh chopped) basil and like a good tablespoon of brown sugar.
Mix well and allow to simmer for a good 30 minutes.
Remove from heat, pour into blender and add a little olive oil (maybe 1/2 tbs) to emulsify and salt to taste. You may want to add some regular sugar at this point if it's too vegetal or still has a little bite to it. Just keep blending and tasting until you like it.
Serves 2.
Oh, and you can use some of the soft part of the baguette to make it a little creamier (though it will thicken it quite a bit so you gotta be careful not to overdo it here) when you blend it.
What we like to do is take the baguette and make some fresh garlic/herb bread with it.
Just take 3~ tbs butter along with a minced garlic clove and some herbs of your liking (you can look for frozen Italian herbs at the store - those work really well here) and nuke it in a bowl in the microwave until the butter is soft enough to mix all the herbs and garlic in. Then just add salt to taste, spread across your two baguette halves and grill until brown and c w i s p y.

I cheat and use the $1 pizza dough in my supermarket deli, just sit out on some greased parchment paper with an equally greased clingfilm wrap on top for a few hours and let it rise, then proceed just like in any other cinnamon roll recipe - saves so much drama!

HUZZAH IT TOOK 3 PEOPLE AND SOME TRANSLATING but I have a rough recipe for the seafood pot for you
Seafood Hot Pot-Serving Four
Napa cabbage, four or five slices, cut into small pieces.
Chinese glass noodles (η²δΈ), two tie. Soak in cold water for 10 minutes or until soft.
Chinese black fungus (NOT DRIED VER), 1-2 packs, washed, cook in hot oil with a little salt for 10-20secs seconds and set aside.
Fresh squid, two. Cut into slices and washed, (after the water boils add in for 20 seconds then immediately remove into cold water)
Fresh shrimp, 15 to 20 medium ones. Pick the shrimp thread, peel it and marinate for ten minutes with white wine and tempura flour.
A box of firm tofu. Slice and sear on both sides for later use.
Two cans of chicken soup/broth.
Cooking process:
Spread the cabbage on the bottom of the pot, then tofu, then black fungus, then glass noodles, add the chicken broth, boil, and season to your liking. Then add the shrimp and squid, cook for another 3-5 minutes, and then take it to the table and serve.

I think I'll stick to premixing room temperature butter with the sugar and cinnamon and simply spread it. It's how my mom always did it and the few times I've tried with melted butter it's always been messy and hard to handle
