got a friend who sells Pampered Chef and bought the ice cream maker since it's so hard to fine lactose free ice cream. the recipe I have calls for 2 cups of heavy cream that I changed out for 10% coffee cream that is lactose free. a cup of milk (again lactose free) 1/2 cup of sugar and a teaspoon of vanilla extract. so liquid but the lactose version came out fine. I know Lactose also helps with the creamy texture of ice-cream
the 10% creamer is the thickest lactose free I've found in Canada so far
Ahhh!!! A classic one that can be normally sold here is made with milk and cornstarch!!!
You cook the mixture and thicken it slightly with cornstarch before churning it!!!

Came out a little burny (but that's actually not a problem for me at all, in fact it's probably something of a preference!) and had one or two slightly yeast-y patches but I think I can happily never buy the pre-made bases again ☺️

I just double checked, and it looks like you can freeze uncooked pizza dough, that way you don't have to worry about making pizza two nights in a row.

I used a bread flour blend from Doves Farm but I'm not sure where else that's available as I'm in the UK

It's very tricky - I've started being able to 'guesstimate' from other recipes for some simpler things like muffins but I'm still quite new to having space to myself to cook. I'm about 15 years into being coeliac though so I've had my fair share of... well of bloody awful food haha.
The prescription bread back in the 2000s was something else. When the Genius brand came around it was like I'd been blessed by the edibility gods themselves. 😂
Yeah I'm definitely getting to that point with desserts like cookies and cakes because honestly I just default to gluten free for those if it's homemade, but everyone basically just goes store-bought for other foods and for the year that I went gluten free as a test I lost it over the food quality quite a few times 😂 So I get you haha
I make sure that my partner still gets a healthy dose of gluten lmao. One of the main issues is that, in order to counter the lack of stretchy gloop, more fat is added. I do get a little... antsy when people "go gluten free" for a diet choice because... well I don't understand why you'd stoop to eating my cardboard crackers with 3 spoons of lard in them when yours taste so much better and are better for you lol (I could go on a rant about levels of sensitivities and how yeah, too much is bad and people eat too much bread etc and it can make them bloated and~ takes a deep breath~ yeah nah I'm good. 😂 )

Here's how i cook my egg:
(Clean sunny side up) Extra low heat on pan with barely oil on the pan! Then using a spatula, poking the whites to help heat pass thru the egg, making them cook faster with the yolk still runny
(Cooked yolk, clean white) same as sunny side, but you baste the yolk with oil to cook it, or opt to coker the pan to cook the yolk
(Runny yolk, crispy edges) i use moderate amount of oil in the pan, then high heat. Add egg and poke whites. Remove from pan once edges ar browning and whutes are all cooked
ohh, the runny yolk, crispy edges is a good tip! I never manage to achieve them

I also recommend using room temp eggs when making sunny side
And semi cold eggos for crispy eggs
With ramen I normally boil an egg with the water that's cooking my noodles, take it out, peel it, hut in half and it's a soft boiled egg
What i love best with ramen is the thai style soft boiled egg!!!
You just boil water, then pour it over the eggs... (Room temp medium eggs) then leave them for 10 mins.
Place in cold water and serve!!! The best!! I recommend that u try it!!!

Egg Drop Soup
INGREDIENTS
4 cups good-quality chicken or vegetable stock at room temp
2 tablespoons cornstarch
1 teaspoon ground ginger
1/4 teaspoon garlic powder
3 eggs
1/2 teaspoon toasted sesame oil
salt and pepper to taste
INSTRUCTIONS
Whisk together stock, cornstarch, ginger and garlic powder in a sauce pan until smooth. Heat over high heat until it comes to a simmer, stirring occasionally.
Whisk the eggs in a glass measuring cup.
Once the broth reaches a simmer, use a fork or a whisk to stir the broth in a circular motion, creating a whirlpool. Slowly pour the whisked eggs into the soup as you continue stirring, this creates your egg ribbons. Stir slowly, if you stir too fast it will still taste good but you won't get the thick egg ribbons.
Remove pan from heat. Stir in the sesame oil. Season with salt and pepper to taste.
you could just use some tofu cubed up and throw it in with the stock to get warm

Miso soup would be super simple.
- Boil water with instant dashi.
- Bring to simmer.
- Put miso on ladle and dip in the water and stir the miso with chopstick to dissolve little by little.
- Add cubed tofu and bring the heat up a little bit but don’t get it to boil, otherwise it’ll be bitter.
- Turn off, add green onions and dried wakame.
I like to dump rice in my miso soup when I’m feeling crummy. Very comforting.

He's now out of the eat-only-cold-stuff-phase, but still has a few weeks of can't-bite-anything ahead; and beyond soup, potato mash, smoothies and chocolate cream, would any of you have ideas of interesting stuff to cook? Soft foods that can go down without chewing 🙂 (I keep in mind the egg-drop soup recipe given above ^^)

We spell it grits here, it’s a corn product. How about noodles for soft foods? We have a lot of prepackaged noodle/sauce variants here where you just boil the noodle then add in dried sauce to rehydrate. Smooth nut butters if you’re worried about protein, if it’s too thick microwave in 10 seconds intervals stirring after until it’s thinned out - I love a spoon of hot runny peanut butter on a cold day!

Personally I love spinach soufflé. It might also be called creamed spinach. I can find it frozen here in the states, its very yummy! Also perhaps quiches? Guacamole? I also like refried beans. I dont chew much either because of very sensitive teeth.
If you make a bowl of refried beans, guacamole, sour cream, and cheese that would be a really yummy dish I eat sometimes thats sort of healthy and lots of flavors. I usually put it in a tortilla like a vegetarian quesadilla

Hey, I just saw this and just wanted to give an idea. My husband had his jaw wired almost shut for two months so we had to get creative.
The answer is rice congee. It’s filling and super easy. I make a big batch in my slow cooker. The fun part is, with a blender you can blend this with almost anything. His favorites were congee blended with beef and broccoli, and congee blended with Popeye’s chicken. Just experiment with stuffs. If you’re worried about little things getting stuck, you can also strain it through a sieve after blending, but that might be extra work.

I really wish all the veggie options were around 15 years go 😂 I grew up vegetarian but had to give it up when my coeliacs snuck in. I could probably do both again (sorry, veganism, I love real milk and cheese too much and 99% of my gluten free food is egg) but I don't know if I can realistically sustain it.
