Tried out a little take out soup kitchen in my city. Very small business, 4 or 5 people just running a soup kitchen during lunch hours for the workers downtown. I had some very nice chili (marketed as "Mexican beef soup", so as not to confuse the average German country bumpkin), plus big slices of whole wheat bread and a lil' apple.

I'm very fond of places like this who do ONE thing and do it exceedingly well. An entire, pretty healthy take out meal, more flavourful and cheaper than any fastfood place I can think of. Plus, the packaging is great, this stayed really nice and toasty on a 20 minute or so bus ride.

split marsh
#

That sounds and looks tasty

#

But I did laugh at the Mexican beef soup though xD

blazing pendant
#

I mean it was soupy chili hahah

#

Beef, beans, chili, bell pepper

Idk what else could have possibly not made this chili

split marsh

Cause when you said that I was all 'mmm caldo' is where my brain went to

But that does sound like your average tasty chili components!

I made some Lahvosh cracker bread with cheese as a quick breakfast yesterday!
Pretty simple recipe:
Lahvosh cracker bread
Hevarti cheese
Parmesan cheese
Cover cracker bread in as much or as little cheese as desired. I use a slice of hevarti sprinkled in parmesan. Broil in the oven for 3-5 minutes or until cheese is bubbly and the cracker bread is darkening around the edges

split marsh
#

Ooohs yes please

blazing pendant
split marsh
#

Ooohs nice!

#

Now is it the crunchy shell tacos or like, street tacos you're making?

blazing pendant
#

I am making... tacos. xD

I have ZERO experience with Mexican cuisine. Like. I had chili the first time... last year in winter when I made it! So. I have tortilla wraps. My research suggests to put them in a pan with oil and make them... bendy. And then fill them. With... things.

#

(I have an actual recipe hahha. Seems to be some homemade variation of refried beans and a salsa with chopped avocado? Probably to emulate a guacamole... ? I assume.)

split marsh
#

Okay so that's crunchy tacos!

#

They're normally best corn tortillas that are about...six inches diameter. What you would do iscarefully dip the tortilla into the oil so they become flexible (with tongs of course!!!) And then fold them overin the oil to crisp up

#

Normally we hold them open with the tongs so they don't crack you fill with your ground beef or whatever meat you choose (leftover shredded pot roast or chicken is good too!) Top with tomatoes, lettuce, cheese

blazing pendant
#

I've watched a lot of food wishes/babish/Adam ragusea to kind of learn about the flavours and seasonings and stuff.

I am going with flour tortillas for now because.. that is all I got. One store even only had them burrito sized, so like, twice the size of my biggest pan or smth xD

split marsh
#

And then on the side you have your beans, rice , chip and guac etc

#

Oh man no that's way too big for tacos

#

But yeah little bit of garlic salt, chili powder, etc is really all you need for your classic beef tacos

#

Street tacos btw are corn tortillas, topped with your meat of choice, little salsa or pico de gallo, love having that with radishes on the side xD

#

No frying but you want a good tortilla for that, not the wraps either

blazing pendant
#

Yeah! I think the recipe i have is fairly... westernised? To an extent. But that is easy and I am still going to use what I learned abt the seasoning and stuff and maybe change up some things

#

For example, i actually don't like the guacamole l had in the ONE place in the state that made any... but I wanna see if I can make one I actually like

#

So lots of experimenting

split marsh
#

Yeah tacos that are Americanized are pretty common

#

Guacamole can be tricky at times when it wants to be it also depends on the avocados

blazing pendant
#

This one is germanized, so even whackier eheheh

split marsh
#

Like if it's not a great avocado...your guac isnt going to be the best we normally do garlic tomatoes, little bit of onion, mush up the avocado with a fork and then mix it all together

blazing pendant
#

Yeah. I think I have ok ones? I squished them for appropriate levels of squishiness

#

Some give, but not mushy

split marsh
#

Sounds good, normally I do the stem check for mine!

blazing pendant
#

Whats stem check?:0

split marsh
#

So if you pick off the stem of the avocado, you can get a really clear idea on how ripe it is

blazing pendant
#

Oooh ok

split marsh
#

If you. Get underripe avocados,. Wrap them in a paper bag for a day or two and they'll then be perfect for eating too btw

noble swan
split marsh
#

When my aunt had an avocado tree, my parents brought up a big bag worth of them and they were so good v v

#

And sweet glad to be of help!

#

I grew up eating eating a lot of mexican food too so xD it's a comfort zone food wise for me

#

I wish my grandma was a bit more reliable on amounts she uses for recioes because she used to make a great mole and homemade corn tortillas too

blazing pendant
#

I grew up with my parent's cuisine where the most "out there" dish was homemade pizza.

Everything else was like German homecooking but not even the good kind. A lot of boiled veggies in slightly sweet creamsauce. Some form of overcooked meat. Potatoes.

#

Teaching myself how to cook was a wise decision

split marsh
#

Oh man xD

#

For us my dad is half mexican half pacific islander so lots of good food there and then my mom's side it was a lot of casseroles and new Mexican dishes but tasty none the less

#

And my big collection is collecting old cookbooks that I'll sometimes cook from so I love cooking and am always one to leave the comfort zone xD

split marsh

neon tendon

#

But yeah agreed sehka I was always hanging out in the kitchen with my parents

#

noble swan
#

I grew up at my great grandmother's, she never worked so she was cooking the best meals ever all the time and i was helping, i never really had a bad meal in my life, at least not untill fairly recently (and it wasn't me who made it xD)

#

found the recipe now @split marsh these are definitely not authentic, but seems like it's an attempt to make refried beans? except not really refried... just first-time-fried xD and a salsa with a bit of avocado.

#

it's definitely a simplistic version, but probably a good place to start

split marsh
#

Omg xD

#

Well refried beans are generally your pintos, black beans, etc that were once whole they are then mashed up and cooked down so it's not really..refried over and over again

blazing pendant
#

yeah that's what they do here

#

cook some pinto beans including the liquid, season, onions garlic etc. and then mas the shit out of them

split marsh
#

So I'd considered it refried :3

blazing pendant
#

yeee. I definitely wanna branch out into different techniques and options eventually, but this sounds good enough for a first attempt.

it's funny cuz the recipe also calls for

sonic vessel

I am trying to hold out in sweets today cause I am planning for some carrot cake later but y'all making it hard

flint oak

Pempek is my dad's hometown dish. it's fishcakes made typically from mullet or spanish mackerel, flour, fried, and served with spicy sweet vinegar sauce.

halcyon saddle
# flint oak

Those are fishcakes with sweet and spicy sauce

sonic vessel
#

So fish and chips minus the chips

halcyon saddle
quasi galleon

Indeed. You need to dip that fishcake into sweet vinegar sauce .. Without it, it tastes less tasty hehe

flint oak

being a dough dish, it's also a blank canvas. i've seen producers put sausages, eggs, cheese, chiken nuggets, etc. into their pempeks.

it was basically a plate piled high with fried potatoes, baked beans, hot dogs, onions, mustard, and a chili-like meat sauce.

Can I get that without the beans 😶?

flint oak

also, pempeks with different shapes have different names.

Ooo it was 2011, by CNN

quasi galleon

Please.. If you happen to visit Indonesia.. And see this thing on the Padang rice restaurant's table.

flint oak

it's difficult to describe how rendang tastes to foreign tongues though. My aunt is from Padang, and everytime she's on a family gathering, we always waiting for her 2kg container full of rendang xD

flint oak
#

i also never had a pulled pork before (or pulled anything, really)

compact scaffold
sonic vessel
flint oak
#

yes, but people also mix those into an even unappetizing mess 😂

sonic vessel
#

Its slow cooked pork left to cook til you can pull ribbons out of it with a fork. Hence pulled.

flint oak
#

aww i wanna try!

#

but maybe pulled beef? lol

pine yacht
#

Won't work with beef

sonic vessel
#

Yeah you can do it with any meat you want to slow cook. We just cover it in paprika chili powder cinnamon pepper onion and brown sugar and let it sit in a crock pot

quasi galleon
#

Beef is too tough maybe?

compact scaffold
#

I’d be too slack to make proper rendang but I could always give this a go I guess

flint oak
#

depends, i think.

sonic vessel

It could be done with a rump roast

#

Crock pots can make anything fall apart

flint oak

if u have it, definitely try Indofood or Bamboe rendang seasoning, since i'm afraid that Malaysian and Indonesian rendang might taste different.

speaking of regional food, you know what the other food from my dad's hometown is?

#

tempoyak. It's chilli relish mixed with durian.

#

two of my nightmares in one.

compact scaffold
#

America seems to be obsessed with cold cuts and sandwiches

sonic vessel
#

Well it's more of something you can eat on the run almost no one has time to cook because we all work. Sandwiches are cheap and portable and easy to do when you can't brain

#

Its a lot of the reason many americans don't or can't cook, never had time to learn or if they did it's expensive.

compact scaffold
#

I don’t get me wrong. Nothing wrong with meat. I could probably live off of just doner kebabs 🤤. It just seems like a big thing. You always see cooking shows etc with everyone eating cold cuts.

sonic vessel
#

Well that is true americans sat meat with almost every meal... but yeah the obsession over sandwiches starts with accessibility and price and then got sophisticated with trying to make the best possible ones? It doesn't help that due to that same time constraint most all american kids get sandwiches for lunch every say until they can make something for themselves. So we're kinda raised with the sandwhich being as staple as rice

abstract zenith
#

Who makes pulled fucking pork out of the leanest, most expensive cut of the pig!? Tenderloin?!?!?!

#

Pulled beef is sort of a thing, but generally is brisket, which is in chunks, not ribbons. However, barbacoa is a spicy pulled beef with I BELIEVE Mexican origins.

#

If you want to make pulled ANYTHING you get a CHEAP, FATTY cut of the animal and then braise it for hours. Or use a pressure cooker for like 30 minutes. Either way, it should have a lot of fat and be a cheap, rough cut, because those come out the most juicy and tender after a long cook.

sonic vessel
#

Lol I think we lit a fire under shlee

abstract zenith
#

Don't ever listen to anyone give cooking advice if they tell you to make pulled pork out of a fucking tenderloin oh my God im having a heart attack right now.

sonic vessel
#

I’m actually horrified myself, Shlee!!! It’s the cheapest and fattiest cuts that we slow cook, usually on a really really low heat

#

I just said pork lol I didn't specify a cut if that saves me wrath

abstract zenith
#

No, someone else did.

sonic vessel
#

It’s like slow cooking a steak filet and pulling it apart why

abstract zenith
#

Pork tenderloin is the filet mignon of pork. Like. No.

#

You make medallions or steaks out of it. Quick sear. It's the cheap cuts you cook for a long time so they become tender, you don't need to tenderize the most tender meat oh my God my inner hobby chef is having a stroke

sonic vessel
#

I mean don’t get me wrong. We slow cooked the cheapest cut of beef and turned it into a gourmet dish. Slow cooking can be amazing for transforming food but why would you slow cook a perfect cut that just needs a tiny bit of love and seasoning abfjkrjfjf

abstract zenith
#

I had to skip over all the delicious talk of Indonesian food just for this rant because that advice was SUPER bad and I don't want foreigners getting the wrong idea about how to make something

My grandma has a recipe for peanut butter jewels that is basically peanutbutter mixed with almond bark put in the bottom of a glass dish with melted semisweet chocolate chips over the top then put into the fridge to set up it's like a home made reeses

#

As long as the food is edible, that’s the most important thing 😂

#

And my aunt decided to make it by nuking semisweet chocolate chips in the glass container both burning the chips and making it so the chocolate was on bottom she put just peanut butter on top neglecting the almond bark and after it set up passed it off as grandmas recipe and bitched about not being able to get it out of the dish

#

No one in my family is safe around food except grandma ..

#

WHY

#

Just... why

Food is complicated. It's like science for hungry people

i’m trying to not judge something by its looks, does it taste good?

sonic vessel
#

Well....it tasted like meat textured salty pineapple. She poured the juice e into the bottom of the pan so it soaked up pineapple juice like to the center

Baking is complicated.

#

Cooking/food isn't super complicated. Like... obviously you don't want 100g of salt on a single beef filet, but like...

#

Cooking/food is a lot more forgiving if you get ratios a little wrong than baking for sure.

blazing pendant
#

Cooking is also easier to fix as you go

#

Like adding liquid or seasoning later down the line

#

With baking you gotta have all your eggs in the basket before it goes in the oven

sonic vessel
#

Agreed! And if you taste as you go, it’s easier to catch issues earlier and correct then too

#

I love both about equal tho

Baking can be fun chemistry

#

I love doing all of it the first time I made a roux without messing it up was a lot of fun for me

#

I usually follow a recipe exactly once to see how it turns out and then tweak it forever until I die

#

My beef stew started out following a recipe and I've made a BUNCH of changes to it over time and now it's like... everyone asks me for my recipe. 😛 (I also eyeball all the spices as they go in so it comes out slightly different every time, but consistently good)

sonic vessel
#

Oh my stroganoff has that problem I always eyeball the seasoning so I have no idea how to write it down

I haven't checked the kimchi recipe by maangchi?

#

Or maybe i have, but forgot

#

Ohhh!!! I think she uses vegetarian broth

#

So it is vegan friendly

#

My friend used anchovy soup or fish sauce

vague steeple
#

well, to be clear, some people are so sensitive to taste that any amount of fish, regardless of freshness, will have that feel to it

#

of course, if you develop a taste for this kind of thing, it stops being a major factor

abstract zenith
#

I don't really like fish. My husband only eats fish sticks, lol. But my family loooooves sushi and sashimi so I know all abou thow fresh it should be and stuff

yeah, it's kind of sad that my friends that don't like fish live with families that are like very japanese and love fish

Looks spicy

blazing pendant
#

it was although that's just the atrocious lighting in my kitchen making the carrots look devil red

#

the actual spice was me being a wee bit overzealous with the obligatory shake of cayenne for chef john

sonic vessel
#

Lol I thought they were huge peppers

blazing pendant
#

nop! haha. it was meant to be teriyaki sauce but yeah, my hand slipped

sonic vessel
