Tried out a little take out soup kitchen in my city. Very small business, 4 or 5 people just running a soup kitchen during lunch hours for the workers downtown. I had some very nice chili (marketed as "Mexican beef soup", so as not to confuse the average German country bumpkin), plus big slices of whole wheat bread and a lil' apple.
I'm very fond of places like this who do ONE thing and do it exceedingly well. An entire, pretty healthy take out meal, more flavourful and cheaper than any fastfood place I can think of. Plus, the packaging is great, this stayed really nice and toasty on a 20 minute or so bus ride.

I made some Lahvosh cracker bread with cheese as a quick breakfast yesterday!
Pretty simple recipe:
Lahvosh cracker bread
Hevarti cheese
Parmesan cheese
Cover cracker bread in as much or as little cheese as desired. I use a slice of hevarti sprinkled in parmesan. Broil in the oven for 3-5 minutes or until cheese is bubbly and the cracker bread is darkening around the edges

I have ZERO experience with Mexican cuisine. Like. I had chili the first time... last year in winter when I made it! So. I have tortilla wraps. My research suggests to put them in a pan with oil and make them... bendy. And then fill them. With... things.
(I have an actual recipe hahha. Seems to be some homemade variation of refried beans and a salsa with chopped avocado? Probably to emulate a guacamole... ? I assume.)
Okay so that's crunchy tacos!
They're normally best corn tortillas that are about...six inches diameter. What you would do iscarefully dip the tortilla into the oil so they become flexible (with tongs of course!!!) And then fold them overin the oil to crisp up
Normally we hold them open with the tongs so they don't crack you fill with your ground beef or whatever meat you choose (leftover shredded pot roast or chicken is good too!) Top with tomatoes, lettuce, cheese
I've watched a lot of food wishes/babish/Adam ragusea to kind of learn about the flavours and seasonings and stuff.
I am going with flour tortillas for now because.. that is all I got. One store even only had them burrito sized, so like, twice the size of my biggest pan or smth xD
And then on the side you have your beans, rice , chip and guac etc
Oh man no that's way too big for tacos
But yeah little bit of garlic salt, chili powder, etc is really all you need for your classic beef tacos
Street tacos btw are corn tortillas, topped with your meat of choice, little salsa or pico de gallo, love having that with radishes on the side xD
No frying but you want a good tortilla for that, not the wraps either
Yeah! I think the recipe i have is fairly... westernised? To an extent. But that is easy and I am still going to use what I learned abt the seasoning and stuff and maybe change up some things
For example, i actually don't like the guacamole l had in the ONE place in the state that made any... but I wanna see if I can make one I actually like

Yeah tacos that are Americanized are pretty common
Guacamole can be tricky at times when it wants to be it also depends on the avocados
This one is germanized, so even whackier eheheh
Like if it's not a great avocado...your guac isnt going to be the best we normally do garlic tomatoes, little bit of onion, mush up the avocado with a fork and then mix it all together

So if you pick off the stem of the avocado, you can get a really clear idea on how ripe it is

If you. Get underripe avocados,. Wrap them in a paper bag for a day or two and they'll then be perfect for eating too btw

I grew up eating eating a lot of mexican food too so xD it's a comfort zone food wise for me
I wish my grandma was a bit more reliable on amounts she uses for recioes because she used to make a great mole and homemade corn tortillas too
I grew up with my parent's cuisine where the most "out there" dish was homemade pizza.
Everything else was like German homecooking but not even the good kind. A lot of boiled veggies in slightly sweet creamsauce. Some form of overcooked meat. Potatoes.

Teaching myself how to cook was a wise decision

It's a tomato squeezer. When I was a child, my (small) neighborhood would come together every couple of years, buy lots of tomatoes in bulk, rent a tomato squeezer and other equipment, and make homemade tomato sauce

Well refried beans are generally your pintos, black beans, etc that were once whole they are then mashed up and cooked down so it's not really..refried over and over again

cook some pinto beans including the liquid, season, onions garlic etc. and then mas the shit out of them

You're most welcome 🙂 The traditional Italian recipe (Risotto alla pescatora, or Fisherman's risotto) also adds a bit of tomato. And trust me, it makes quite the difference. So delicious!

Alfredo pasta made with homemade sauce of butter, heavy whipping cream, and parmesan cheese with some garlic and herbs

stick of butter, cup of cream, heat til at least sorta homogeneous then add 7-10 oz shredded or cubed cheese of choice and stir over medium low heat until smooth
I've done it with bacon grease instead of butter actually
it is Super Bacony and u gotta use like, a good sharp cheddar or the bacon flavour is overwhelming
also it takes like 2 pounds of bacon to get enough grease so there's that

Well yeah, that's the unfortunate part. I have a friend who.... it's a long story, but although she likes the taste of food, she never grew up appreciating it, or understanding the satisfaction that comes from having cooked something yourself and having someone else enjoy it.
She visited me end of 2019 here in Germany and we really helped fix her relationship with food... And now she's moved in with some friends and she's in charge of dinner. They do Hello Fresh (or some equivalent) where they send you the ingredients portioned out and all that, and the recipes with guides... And she's like "I REALLY like to cook now!"

Pulled beef is sort of a thing, but generally is brisket, which is in chunks, not ribbons. However, barbacoa is a spicy pulled beef with I BELIEVE Mexican origins.
If you want to make pulled ANYTHING you get a CHEAP, FATTY cut of the animal and then braise it for hours. Or use a pressure cooker for like 30 minutes. Either way, it should have a lot of fat and be a cheap, rough cut, because those come out the most juicy and tender after a long cook.

Cooking/food is a lot more forgiving if you get ratios a little wrong than baking for sure.

With baking you gotta have all your eggs in the basket before it goes in the oven
