Mackerel in a pot. Press the button when it's in the highlighted area.

Saute onion, 2 cloves garlic, and celery in butter, season with salt pepper ginger, when soft add canned mackerel, then about 4 cups water (about a cup and a half of that was the brine from the mackerel can and water from the canned peas), and one cup extra creamy oatmilk, once it's been simmering (stir occasionally) for about 15 min add a can of sweet green peas, at 20 min slowly add instant mashed potatoes till it's the desired thickness
(Both the mackerel and peas were drained before being added)

You can use regular milk instead of oatmilk, just add it when it's just about done instead

Ooh it looks good! Iโve never tried Matcha cheesecake before.
It is, my fav cheesecake actually. Very easy to make. The matcha is only the half of that dish, so its not very overpowering.
I think I will have to find a recipe and give it a try. Hope you enjoy it!

I find the butter + pig fat to be overdone in the end. I usually just add a lil bit of one OR the other. Pig fat kills the taste of butter anyways...
b) Soup is a leek + however much brussel sprouts you have at hands + 2 small potatoes + 50cl milk + chicken stock. Cut vegetables and fry a bit in butter; add potatoes, liquids and seasoning, add water till it's covered; cook till soft; blend.
I add a piece of blue cheese in my bowl when the soup is very hot; and wait a couple of minutes before eating; because I like how the flavour spreads that way: you can have it more or less intense depending on where you spoon out your soup ๐ But you can also just melt cheese in the pot once the soup is blended.
c) Kouglopf:
INGREDIENTS
250ml lukewarm milk
20g fresh (alive) baking yeast
2ts salt
100g sugar
500g flour
2 eggs
125g very soft butter
150g raisins
Some almonds for the form
Confectionner's sugar for dusting
PREPARATION
Put the yeast in the milk. Mix quickly with a spoon. Let it sit for some minutes.
Add eggs, sugar, salt. And THEN flour. Mix 10m with a robot (double if you do it by hand).
Add butter. Mix till dough comes off the sides of the robot.
Add raisins.
Let it rise at room temperature for two hours (I usually warm up the oven for one minute and let the dough sit in there). It should about double in volume; if not let sit longer.
Butter a kouglopf baking form. Add almonds in the holes. Kick down the dough (? sorry, not my first language: hit/press it to get the air out) and put it in the form. Let it sit two hours or more; it must reach the edge of the form or about double volume again.
Pre-heat oven at 210ยฐC; lower it at 180ยฐC, put the kouglopf in and cook for 40mn. If it browns too much after a quarter, add some aluminium foil on top.
Remove from the form right after taking it out of the oven.

To make the kouglopf more tasty: you can make a syrup (bring 50g water + 50g sugar + flavouring (orange blossom water or bitter almond extract for me) to a boil), and brush it on your kouglopf when it comes out of the oven. Then wait until the whole thing has cooled down to dust with confectionner's sugar (the very thin, powdery kind, I hope that's the proper name).

You can make this with very simple ingredients. 2 eggs, 300gr greek yogurt, 200gr full fat cream cheese, liquid stevia as sweetener, few drops of vanilla and rhum extract. Mix them well using a whisk and pour in the oven safe container. Top it with a few diced peanuts, cashew or almonds, sugar free choco chips and melted dark chocolate. Bake it in 150ยฐc in 35-40minutes until the center is not jiggly anymore. Chilled for a few hours in the fridge and enjoy ๐ it only take me few minutes to prepare.

Specifically, a catfish steak (never cooked that before, but I have done whole fish) on yu choy to avoid it molecular bonding to my dutch oven, on green onion, pepper strips, rice vinegar, garlic and red chili crisp (plus just a TON of spices). I'm hoping the liquid runs down and becomes a sauce with the veggies and I can pour it back over the fish.
Experiment successfully concluded, my mouth is on fire the seasonings need tweaking kill me
It did work though, it became a genuinely good sauce that I put on some rice, wowsers.

Got together with my family to bake Christmas cookies ๐ A day of work later, everyone leaves with a nice box!
It's a fairly sturdy butter cookie dough with hazelnut pieces, that you shape into a hedgehog (round at one end, pointy at the other). Bake and wait until they're cool, then spread melted chocolate on their back and dip them into chocolate sprinkles; and finally draw the eyes and nose with a toothpick and a bit of melted chocolate ๐
If you're a cooker, challenge yourself to cook in real life, like coral island food. ๐

I used frozen passion fruit. I'm a baking student and we had some fancy puree but I couldnt afford it outside of school so I just pureed my own frozen passion fruit in a blender ๐

Miso is delicious though super salty as is, but it's meant to be dissolved. I find it really hard to describe the taste. It's as if smoked fish and whole-grain cereal had a baby, who then was boiled into a broth and evaporated into a paste.

My school work is quite literally all just baking its pretty cool. Tho there is a lot of reading and memorizing of terms and a specific math class you gotta take to learn conversions and inventory stuff

This is bao bun also known as steamed buns, an Asian style of filled bun or bread-like dumpling, wrapped inside a sweet white dough. It's a little sweeter than the average bread bun, therefore it is served with fillings to balance out the flavours and make it into a more savoury. I got chicken karaage here with lettuce, tomato, and onion as fillings for my bao buns as lunch meal. It's delicious and warm treat you should try when you visit Asia country. ๐ฅช ๐ ๐ฅฌ

Them egg whites be a good leavener. ๐ฒ The only thing I do differently from most recipes is I substitute milk for heavy cream cause I prefer the taste.

Whisk together two egg yolks and 150ml milk. In another bowl, mix 125g flour, 2tbsp sugar, some salt, 1tsp raising powder. Add the wets to the dry. Let sit for 30mn.
Whisk the egg whites into a hard snow. Add to the mix in two times, carefully. Cook on medium heat, in a pan with butter. They're ready to flip when they bubble. Watch for burning, it can go quick. For the chocolate sauce: 80g milk chocolate + a few squares of dark chocolate + 1 tbsp coconut oil, melted (or more or less oil, depends on how liquid you want it).
They rose beautifully but unfortunately I had to trash them. ๐

It's kue lapis! It's a layered sticky rice treat. The green is from pandan extract
This was very good but I would add some more parmesan next time as the camembert was a bit overwhelming.
You slice the camembert in half, melt half in the oven, add cooked pasta, 2tbsp parmesan, spinach and 200ml cream. Mix well. Top with other half of camembert and meat then bake again. I think there's garlic and rosemary as well when you do the initial camembert
My bakes don't look as good as AJPeng's (who's amazing at it), but here's the chocolate cake I made โบ๏ธ

Jamu Recipe (makes about 800mLs)
Ingredients:
- 250g (1 cup) fresh turmeric
- 125g (1/2 cup) fresh ginger
- 125g (1/2 cup) honey
- 2 limes (juiced)
- ~500mL water
Instructions:
- Roughly dice your turmeric and ginger (you're gonna blend it so dw about being neat)
- Blend the two together into a paste (this WILL stain the vessel yellow, so pick something sacrificial. Alternatively, you can mince the turmeric/ ginger with a knife, which stops the worst of the staining but makes less strong jamu)
- Add you paste/ minced rhizomes to a pot with the water in it. Bring it to the boil and then turn back down to low
- Stir in the honey and lime juice
- Strain the mixture to remove the worst of the pulp and bottle it
- You can drink it warm or cold. Personally, I like it better cold. Also reminder that you drink it in small amounts
Side note on fresh turmeric - in Australia at least, there seems to be two varieties: one that's super strong and will leave sticky resin on everything (extra orange), and one that's more mild and does not put resin on everything (it still will turn things yellow, just... less so)
I found doing a mix of both prevents the resin build up, but still gets you the strong stuff

I normally find it at the fruit shop if I'm not being gifted bucket loads of it cause people grow it and then don't know what to do with it lmao. Anywhere that sells more uncommon fruit/ veg is a good place to look - I have also heard of recipes using turmeric powder, but I've never tried them myself

Depends on how clean they are. I personally leave it on since it mostly peels off while cooking and strains out, but I also hand wash all my ginger and turmeric beforehand.

I used the recipe from King Arthur, with a few tweaks:
- Cubed the butter and put it in the freezer for an hour before baking
- When I started mixing the dry ingredients, I first put the buttermilk in the freezer, too - it was in there for about 10 minutes total
- Didn't preheat the oven while mixing ingredients
- Used a food processor to blend in butter. and, later, milk Go for an uneven texture for taller, flakier biscuits.
- Place biscuits no more than 1/4 inch apart on the tray.
- Put the whole tray in the fridge, then preheat the oven.
- Don't forget to brush the tops with milk before putting them in the oven, they brown better like that.

I made duck curry from scratch! That recipe has odd ingredients, like a grated apple and a square of dark chocolate, but the resulting texture is absolutely amazing: thick and creamy, with almost no fat. Also I made a soup of everything green X)

The recipe for the gingerbread i used is the simple gingerbread house with almonds on the roof from BBC good food, it doesnt have a time for baking but i find 8mins on gas 190 Celsius makes gingerbread solid enough to hold a structure and soft enough its still good to eat!

Wanted to share some homemade eggnog I made about two years back when I was a part of another fandom. The left is butterscotch flavored, the middle, plain/kinda vanilla and the last Caramel.
Another pick from the same time, a few years ago. Homemade spiced hot chocolate with Jumbo marshmallows, a side of store-bought pound cake, and a homemade cut strawberry rose. (I usually sprinkle or dip the strawberry roses I cut in red or pink sugar, but I decided the hot chocolate was sweet enough.)

Have you ever tried Mexican wedding cookies? They are similar ish to the almond crescent cookies but they have pecans or walnuts. I actually make mine without the nuts because that's how my mom made them growing up but they're good with too

I'm proud of this buttercream ๐ I remember vividly trying to make buttercream when I started cooking, when I was about twelve or thirteen... And failing miserably, and getting angry at it cause the recipe seemed so simple XD This recipe remained my nemesis for many years XD (in retrospect, the butter was probably just too cold, I was using a whip instead of a fork, and other small shenanigans that make all the difference ^^) So now that I'm old and wise (hrm), every time I nail it I'm stupidly proud of it XD

For iced tea, I always steep it hot for a while then put it in the fridge. I've never had an Iced Tea maker come out quite right
As for how long, it depends on how much you are making, but I would go 2 bags in a gallon of water for about a half hour to steep, then chill

115g butter
85g dark chocolate
70g confectioner's sugar
15g cocoa powder
1 tsp vanilla extract
1 generous pinch of salt
3 to 5 tbsp of cream
(Melt chocolate in half the butter; combine other half of (room-temp) butter with sugar and cocoa; join all ingredients together; done).
Based on this DNA analysis, please enlighten me regarding the ethnic group to which it belongs, I am eager to learn XD
Hmmm, well, the only two buttercreams I've learned in school that use confectioners sugar (instead of granulated) were American and German buttercream. Based on the mixing method and egg free ingredients list I'd say it's American!
The others pose difficulties of cooking sugar to cook yolks or make some sort of base like a custard base- something I struggle w making too. The only one besides American that I'm good at making is Swiss because it's the most forgiving in my experience

Scored a bit too far each time, but it turned out good. Though, I did realize that I don't think I like the taste of sourdough... But I like making it so I'll just force myself to eat it.

INGREDIENTS
- 1 small red cabbage
- 3 to 4 "fruity" apples (wth that means, cause aren't all apples fruits? Recipe advises gala or chanteclerc varieties)
- 2 cinnamon sticks
- 2 stars of star anise
- 2 cloves
- 2 soup spoons of acacia honey
- a good pinch of nutmeg
- salt, pepper, olive oil
- a glass of water
FYI: I used half a cabbage for three apples, all the spices, and only one spoon of oak honey. I think next time I'll do without the honey because it was slightly too sweet to my taste.
PREPARATION
- Wash the cabbage then slice it and cut it in thin strips.
- Wash the apples and cut them in whatever size pieces you want (there's no apple police around to control that) BUT keep the skin, it will prevent them a little bit from disintegrating.
- Heat up a bit of olive oil and fry the cabbage in a pan for some minutes, stirring occasionally.
- When you're bored of doing that, add the apples, the spices, honey and water, and mix well. (If you take already hot water it doesn't pause the cooking since everything stays at temperature).
- Cover the pan with a lid. Let cook for about 45mn on medium-low heat (the water in the pan must simmer). Stir it once or twice to spread the spices' flavour, but be careful not to mush the apples. If there's too much juice left in the end, take the lid off to let water evaporate for some minutes.
- Don't break a tooth on a cinnamon stick while eating.

This is the grams recipe. The recipe can be fresh or frozen peaches. They don't do much breaking down when you cook them so I'd cut them similar to what you want them shape wise at the end result.

Peaches are amazing! I've used them for topping ice cream, turnover, pie fillings, and I haven't tried yet but they could probably work for a cake filling, those the peaches may need to be nore finely chopped then or blended after the mixture cools

I just realized today that I work in the village where the winner of the Best Bakery of France 2025 contest is set ๐ฎ
It's the tiniest bakery I've ever seen, set in a dead end so narrow you can't walk side by side with someone else. There's barely space for four people in the bakery, with just a wooden board for pastries (there was six or seven kinds) and a rack for bread. The place is fairly dark, not separated from the kitchen, which is just on the other side of the board; and despite that there's a guy who pulls the door open for you and speaks to you with the manners you'd expect from a butler in a palace, with a smile and a politeness normally reserved for lords and ladies. An odd mix ^^
They deserve their victory though, it's absolutely delicious.
