So we're having a blast taking down enemy fighters "on foot", but our pilot keeps shooting them while we're on them, because they remain a threat to the ship while being taken down. I think the enemy fighters and maybe gunships should go into a defensive mode when a player shooting their weakpoints. So instead of keeping on attacking the player ship, they could spin and weave and dodge trying to shake off the player, and no longer be an immediate threat, or at least have some handicap, like inaccuracy or less maneuverability as the weakpoints are being destroyed.

Yeah, the current optimal/safest way to deal with enemy ships is to ditch your ship and just jet over to take them out. It’s zero-risk and just takes a bit more time.

Maybe instead of defensive turrets on the fighter themselves, other fighters would try to shoot you off them?

This would make for a great lore point. Picture deep monologue voice…
