Geyser-Fabric and Geyser-NeoForge will always support the latest Minecraft: Java Edition version.
In this case, it's Minecraft: Java Edition 26.1.
If you want to make Geyser-Fabric work on Fabric 1.21.11, you have to use ViaProxy or use the old version of Geyser that supports Minecraft: Java Edition 1.21.11.
If you do decide to use the old version of Geyser that supports Minecraft: Java Edition 1.21.11, please keep in mind it won't be receiving any updates.

I would highly recommend just using ViaProxy though.
You can still get the recent Geyser updates with it.
If you use an older version off Modrinth, it won't recieve any new Bedrock updates and other stuff.
