change bedrock texture settings?

with bedrock texture that you can change the pack with the cog icon in the settings can i do that for a server pack? or remove all the others so it only goes to the one i want

Servers don't have a way to select subpacks in an installed resource pack. The only way to really do that would be to unpack the resource pack on your computer, and edit the manifest.json file to remove all subpack entries except for the one you'd like to use. You can then upload the modified pack to your server, and it should use the only remaining subpack.
