If you're not seeing the disconnect message in console then you're most likely connecting to the wrong server by accident somehow

if you do /geyser dump and open the link in a web browser, at the very top it should list what Bedrock versions the current build you're using is compatible with, as well as info on what versions all the plugins on bungeecord (including geyser) are

And 1.21.80 would've been listed in bedrockVersions

this issue was related to cloudflares caches and i just wasted 3 hours of debugging

downloading the same file behind company vpn, i receive a ~13kb bigger file, and guess the checksum

i cannot reproduce it at this point. i just tried and now i always receive the sime file.

at 22:52 UTC i downloaded a fresh jar on a completely new windows vm. Checksum: 8e9b32f382266ce05eba8de23714cfd6

i don't know for sure if this may or may not be cloudflare related. downloading with company vpn worked, and now i can even download locally and receive the correct jar.
