For 1, 1.21.55 doesn't exist, 1.21.51 is the latest currently
2, When Geyser updated to 1.21.50, support for anything older than 1.21.40 was dropped. You can look at the files that were changed and you cant try to revert them, changing what Geyser supports is more than just 1 class.

Good luck with it, since this looks like a hassle to maintain just reading it and was previously described so, if you're making a fork you'll probably have to update Geyser manually in code.
If I were you, I'd forget doing this, Theres no real reason to support older bedrock versions as most people are using the latest version, since most devices force you to, and if you do have players who are on older versions, they're likely to update soon

The fact is that I have miles of Russian players and many are using the version. 1.20 and higher. Because on many Russian servers, the login is from 1.20 and many players ask me to log in from this version. I understand that I will have to update to the new version myself. One coder I know told me that it would take 30 minutes to do support starting with 1.20.80

Its really not worth it and its better off if those players update to the latest versions instead, If they bought Minecraft legitimately then they're forced to do that for online play
For that statement, that depends on how well you know the java programming language, Geyser is a complex plugin
Geyser hasn't tested if 1.20.80 works with 1.21.4 servers because it obviously got removed long ago, so if you have issues with older support than you're on your own also

See the github pull I linked. Thats the changed were 1.20.80 - 1.21.3x support got removed. There was around 42 classes changed between that
