Because that way you can just try things out to see what works and what not without loosing anything.
When you did the tutorial it was more of a "blueprint" where you draw the rooms to leave the walls for the doors to begin with.

To build a room on the southern side:
Go down first in a straight line.
Make it a bit wider at the bottom.
And then draw from the bottom to the top.
That way you have your wall at the top.
