step 1) cut up your chicken
step 2) season your chicken

step 3) sauce your chicken

step 4) brine your chicken. put in fridge overnight
step 5) bread chicken in seasoned flour
step 6) do it again
step 7) put it in the fridge until ur ready to cook and serve (at least an hour tho)

im hungry for chicken now
step 8) heat up oil in cast iron skillet about 3/4 inch
SAFETY: ONLY COOK WITH VERY HOT OIL IF YOU KNOW WHAT YOURE DOING AND HAVE PROPER EQUIPMENT. a lot can go wrong really quickly
I recommend using canola or peanut oil for deep frying. peanut oil tastes better (also peepy likes peanuts) but make sure whoever ur feeding it to isn’t allergic!!
Step 9) carefully place chicken in hot oil. the oil should have risen covering at least half of the chicken. For wings I do 4 min on each side (5 min for extra crispy) and 7 min on each side for bigger pieces like thighs or legs
Work in batches, don’t over crowd
