Heh, it’s in the name. Quesadilla comes from the word Queso, as in cheese. Having a quesadilla without cheese is just a normal taco as it will just have some other filling. It’s actually a heated debate between people in the capital and the rest of the country as a regionalism. An example is you don’t buy a strawberry pie and expect to be asked if you want strawberry filling on it or just the pie crust. If you call that gatekeep, then that’s just sad.
