WHY
I spent so long writing that post out....
Okay well I'm not writing those 3 paragraphs out again.
TL;DR:
Twitch Studio being open at all causing a 5-10fps drop (From 50fps) in MSFS.
This does NOT happen with OBS Studio.
I've restarted my PC, it's a fresh install of windows 11, I've tried togglinge every setting individually on Twitch Studio, I've even tried changing process priority/affinity.

OBS open with a far ore complex scene (game capture+ Webcam + overlay)
System:
Ryzen 7 5800x
RTX 3070 ti (primary card)
RX 560 (Stream encoding + extra monitors)
48GB DDR4-3600
I just reset twitch studio up after my windows reinstall, previously I straemed using the software with no such performance drops. I've tried both the experimental channel and stable channel, there are no differences between the two.
I've also tried swapping between nvidia NVENV and AMD VCE encoding, no differences in the performance drop
It also happens with a blank scene loaded, and if the preview is disabled.

What are the GPU/CPU doing while playing and streaming? Is your twitch studio using your 2nd gpu to encode, or is it trying to use your 3070? What is your stream quality settings in twitch studio? Are you dropping frames, or have slow frames?
no clue here. RX 560 shouldn't be used at all.
I haven't even started a stream. I've answered the encoding question (I've tried using both gpus) in my above message, and I've tried all 3 quality presets on the VCE and toggling PVT on and off on NVENC. Even switching to standard CPU x264 encoding doesn't change the performance drop of just having twitch studio open
What's the CPU/memory number in your Twitch studio? Do you have a lot of scenes and/or browser sources? My Twitch studio with 6 scenes uses between 3-6% cpu, and 1.2gb memory.
it does need gpu to capture/encode and render the stuff. 10% gpu usage. I have a potato gpu.

I don't have any browser sources in TS and only 6 scenes with mostly everything disabled at this point
It ran fine before I reinstalled Windows with all the same settings. But it's been about 2 months since I last streamed due to losing everything off my drive and my work schedule
So I can only guess it's been a recent update to the program or something incredibly obscure I'm missing
