For example, the DMC twins can taunt. The upcoming Bianca: Crepuscule takes this a step further, allowing you to tap/hold the core passive gauge to switch between Dark/Radiance modes.

Usually to perform this, you would tap, click, or hold on the core passive gauge, depending on the move.
For people who do not play on mobile or with a mouse, it is more complicated. To perform this action, you should press the button assigned to the Battle Story - Skip keybind. For example, default for keyboard is G and default for controller is Share/Select. You should change these if they are not comfortable for you.
